Our Favourite Summer Cocktail Recipes

Summer is the perfect time to find a spot to unwind in the garden with your favourite fruity drinks. So we've put together some of our top Summer cocktails for you enjoy whilst taking a moment to lounge on the corner sofa or hang for a while in an egg chair

Watermelon Martini

Nothing shouts Summer more than a martini with a refreshing watermelon twist. With only 3 ingredients required, plus a watermelon – this cocktail is easy to make and even quicker to enjoy!

You will need:

50 ml vodka
12.5ml lemon juice
12.5ml sugar syrup
4 chunks of watermelon (plus extra for garnish)

Method:

  • Chill a martini glass in the freezer, or fill it with ice
  • Add the watermelon chunks to a cocktail shaker, then using a muddle or a spoon, crush until mostly liquidised. 
  • Add the vodka and sugar syrup into the shaker.
  • Squeeze the lemon juice and add to the shaker. 
  • Fill the shaker with ice then seal and shake vigorously for 10-15 seconds, or until the tin is very cold.
  • Take your glass out of the freezer, or remove the ice. 
  • Strain your cocktail into the glass then garnish with a wedge of watermelon. 

Aperol Spritz

When we think of a Mediterranean summer, this drink definitely springs to mind. Quickly transport yourself to the Amalfi coast with an Aperol Spritz, just add sun (and some pizza) and you could almost be there!

You will need:

750ml bottle of prosecco
Bag of ice
Bottle of Aperol
Bottle of soda water
Orange (to garnish)
Rosemary (to garnish)

Method:

  • Chill the bottle of prosecco and Aperol in the fridge.
  • Fill 6-8 glasses with a couple of ice cubes and roughly three parts prosecco to one part Aperol.
  • Add in a splash of soda water and garnish with a slice of orange and a sprig of rosemary.
  • Serve straightaway so that the fizz stay lively!

Frozen Strawberry Margarita

You can’t go wrong with a summery twist on a classic, especially when it involves strawberries. And when it looks this pretty, this will be the drink you’re turning to this Summer.

You will need:

300g frozen strawberries
120ml silver tequila
60ml triple sec
60ml lime juice
2 tsbp. honey
5 large basil leaves (optional)
6 standard ice cubes
Lime wedges for serving

Method:

  • Add frozen strawberries, tequila, triple sec, lime juice, honey and basil leaves in a blender and blend until smooth. 
  • Divide the mixture into 2 glasses and garnish with a lime wedge.
